Durum wheat, compared to soft wheat, is characterized by a higher protein content and a floury section formed by hard granules with sharp edges. We use cylinder grinding: based on a scheme where the flour is almost never “regrinded” and the steps for obtaining the final product are reduced to a minimum. The flour is from certified organic agriculture. Ideal for pasta, semolina, bread and dumplings.
